Happy Wednesday! Let’s make this short and sweet. You have places to be. So, good news. We’ve made this pizza TWICE (back to back Sundays). However, bad news. I forgot to take a final pic both times. I was all about getting it on the instatgram story that I forgot to take a pic that wouldn’t expire within 24 hours. 

But, I’ve been trying to stay true to one of my 2017 goals (more like habit changes) and following through by doing what I said I would do. And I said I would start posting better alternative food ideas once again. As in this week. So, here ya go. 

But before we get into it, I freakin’ love Mellow Mushroom Pizza. In fact, if I could have one last meal before I die, it wouldn’t be tacos. It would be Funky Q pizza. And I don’t even like BBQ or BBQ sauce that much. Weird. But I only eat said Mellow pizza like 2 times a year, if that, because it makes me not productive for a good 3 days. So, this is a good alternative. 

Mellow Funky Q Knockoff

Serves 2-4

Prep time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • Chopped or cubed chicken – cooked fully (preferably grilled) – 6 oz. 

  • Oregano – to taste (for chicken).

  • Cauliflower Crust from Trader Joe’s. (But honestly, as much as TJ’s is MY FAVORITE, I’m not impressed with this, so I wanted to give you some other easy options: homemade cauli crust and homemade coconut flour crust

  • Tomato sauce (not paste) – canned – 6-8 oz.

  • Sugar free bbq sauce – We used some of this G Hughes sugar free, honey flavor bbq sauce. You can get your own bottle at publix. – 4 oz. 

  • Bacon – cooked. 4 slices should be sufficient, but if you want more, I’m not judging. 

  • Mozarella cheese – 1/2 cup – shredded or grated. 

  • 1/4 purple onion – chopped.

  • Canned chopped black olives – 4 oz. (totally optional, but we made it happen). 

Instructions

  • Prepare that crust. Follow the instructions on the TJ’s cauli crust box. But, like I said, I wouldn’t be hurt if you went with your own cauli crust here, or this coconut flour crust from here. 

  • Make sure chicken is cooked (preferably grilled) and chopped. Season chicken with oregano. 

  • Pan fry that bacon. We did 4 slices. You could totally cook the bacon in the oven, but we prefer to save our bacon fat (is that weird??)And we used what was leftover to cook the chopped purple onion.

  • Sauté chopped purple onion on pan. Use 1/2 of bacon fat. I promise, you’ll like it.

  • While crust is baking, prepare sauce. In a pot, on low heat, warm 6-8 oz of canned tomato sauce not paste. Do this for about 5 minutes

  • Add in your 4 oz of SF BBQ sauce to the tomato sauce. Allow to cook together for 5 – 10 min, stirring occasionally, still on low heat. 

  • On a plate, lay out cooked chicken, cooked bacon, chopped onion, chopped black olives (optional), and shredded mozzarella cheese. This just helps when you’re loading up your pizza. 

  • Remove cooked crust from oven, and adjust oven to broil. 

  • Spread sauce on pizza (mixture of tomato sauce + BBQ sauce). 

  • Add ingredients to pizza. Spread around and use as generously as you would like. 

  • Throw pizza (more like place pizza) back in oven for 5-7 min to allow ingredients to cook in. 

  • Remove from oven and pretend you’re eating mellow. I mean, you’re not. I’m not pretending to be someone I’m not. But this is still good and you’ll be able to workout tomorrow and feel great. 

 You know I love some Trader Joe's, but this isn't my favorite thing ever. But it's still a much better alternative than straight up dough. Mmmm. Dough.
