Happy Daylight Savings Sunday Funday! This is one of my favorite Sundays of the entire year. We get to see more sunshine (aka no more getting dark before 6 pm), spring is just around the corner, and everyone is a lot happier. So, all of this makes losing an hour of sleep totally worth it. HOWEVER WHERE IS THE SUN AND WARM WEATHER? I mean, it freakin’ snowed in South Carolina this morning. Since when does it snow in SC in March?!?! Thursday I got tan lines from riding the assault bike outside at the gym. Today it snowed. Oh well. Be patient, y’all, because it’ll all be worth it a month from now when you’re sitting on your deck with good friends, food, and/or drinks – all at 7:30 pm while the sun is still out.
As you can see, I’m thrilled. But moving on to happier things…like comfort food. I decided to make today better by trying out PaleOMG’s Slow Cooker Buffalo Chicken Chili. If you know me, you know I love her. She has great, easy recipes that aren’t too complicated, and she’s hilarious. I love following her journey through all things CrossFit and fitness. She also has a new”ish” podcast that I like.
This recipe doesn’t disappoint. Try it out one day this week. Because word on the street(or my weather app) is that it’s going to stay cold for awhile. So, one morning this week, slice and cut up your veggies, literally throw it all in the crockpot, and come home to your house smelling amazing and something warm to eat up.
PaleOMG’s Slow Cooker Buffalo Chicken Chili
We didn’t have any Tessemae’s ranch, but a little bit of avocado on top was pretty good. We also just used regular organic chicken broth instead of beef jalapeno bone broth.
