Happy Sunday! I feel like the weekend just started. But guys, I was so productive. I tortured myself in the most fun of ways doing 17.1. Even if you don’t do CrossFit, I’m sure you know what 17.1 is because everrryyyone is talking about it. Yesterday I finally bought a white vanity (or more like a desk) that Daniel has been trying to get me to buy for a year now. Today I went to Greenville and had a pretty legit Mexican salad with my friend, Marlie (pronounced Mahlie). We went to the new Lululemon store too, and everyone there is so nice. If you want to be around nice people, just go there. 

Sorry I haven’t posted much about food or recipes lately. So, I’m going to make it up to you by showing you all I bought at Trader Joe’s today. This wasn’t a BIG trip or anything, but it’s just some basic things that we love buying every single time we go there. 

 Now, this isn't evvvverrrything we buy on let's say a big trip to TJ's. but this does include most of the essentials. Get ready because I'm about to RAMBLE.  As far as produce goes, I like their small, little, baby sweet potatoes, so we usually get those. We'll get other random produce too, like peppers, onions, and the occasional spaghetti squash. We also buy several bags of that green cauli rice you see over on the right. However, this doesn't compare to the frozen kind they used to sell in the frozen veggie section. Maybe they still sell it, and I just miss it, but they are always out of it when we go. Good news is you can buy frozen cauli rice from most grocery stores now, so sometimes we just buy it frozen from Publix, Ingles, or the WalMart Market. We love their frozen peppers, broccoli, and brussels sprouts. All are under $1.50/bag I think. We usually buy several of those bags of frozen chicken, as well as a couple lbs of ground turkey. That apple chicken sausage is pretty legit too. That coffee in the back is our go to. It's just TJ's French Vanilla. But I do like their seasonal coffee flavors too. There's some coconut milk in there, because I like to keep that on hand for when I make that sweet potato soup that we love so much. There are also some english muffins right there in the middle. I haven't had any in awhile, but they're great for me if I'm going to do a second workout in the afternoon. I'll eat one with some peanut butter about an hour before I workout, and it gives me some energy and fills me up. However, those only stay good for about 5-7 days, so they usually don't all get eaten. There are some oats in the very back. We also eat the TJ's steel cut oats, but we didn't need any this time. There is some coconut oil spray over to the left side. That is one of the best inventions ever. There are some RX Bars at the front because those are good on the go snacks. I also always get Daniel an Epic bar because he loves those. I also usually always get one of those small $1 bags of dark chocolate peanut butter cups for Daniel in the check out line. But he's always nice and lets me eat 1 (or 2) as well :) Wow, that was a lot of rambling I just did.

Now… moving on to this recipe. Daniel is eating it right now and says that it’s “amaaaaaaaaazing.” I, however just had lunch like several hours ago, so I’ll eat some later. – after an epsom salt bath and about an hour of romwod and just sitting in child’s pose to stretch my muscles back out…all so I can redo 17.1 tomorrow. 

I talk about cauli rice a lot on here. Everyone who knows me knows I love it. I’ve been trying to mix it up lately by throwing different veggies in said cauli rice, so it doesn’t feel like I’m eating the exact same thing all.the.time. So, today I went with an Asian theme. Cauli rice is always better with egg, so this time, I cracked a couple of eggs on top. I’m also not a fan of the traditional fried rice veggies like peas and carrots, so I went with zucchini, green pepper, sweet onion, and mushrooms. 

I really wanted zucchini just so I could use these little baby zucchinis I found at Trader Joe’s. 

 

It’s really easy to make. Hope you enjoy it!

Asian Fried Egg Stir Fry

 

Makes 4-5 servings

Prep time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 1 tbsp grass fed butter – we use Kerrygold. 

  • 1/2 sweet onion – diced. 

  • 2 tsp garlic – minced.

  • zucchini – sliced – approx. 2 cups.

  • 1 medium green pepper – sliced and diced. 

  • 1 cup mushrooms – sliced. 

  • cauli rice – cooked separately first(because it was probably frozen) – about 2 cups. 

  • 2 tbsp coconut aminos sauce

  • 2 tbsp sesame seeds

  • 2 eggs – these will be used for frying. 

Instructions:

  • In a deep, nonstick pan, turn on low heat. Add butter and garlic.  

  • Cook onions in pan. Once they start to clear, throw in the rest of the veggies as well, including the cooked cauli rice.

  • Add coconut aminos sauce. Add sesame seeds. Mix well 

  • Once veggies are soft and almost done cooking, crack two eggs onto pan. The eggs can go on top of the veggies, but they do cook quicker if you can spread out veggies and crack eggs directly onto pan. Make sure heat is still on low. 

  • Allow eggs to cook.

  • Serve right away, with fried egg on top, or mix egg into veggies.

 

Notes: Store leftovers in fridge. This is great to eat right away with the egg looking pretty, or mix the egg with the veggies, store in the fridge, and eat later.
