Happy Tuesday! Guys, the sun came out today. It was glorious. I don’t even really go “running” anymore, but I even went for a quick little run this afternoon to show my excitement. When I say quick little run, I mean less than 2 miles. Then I got bored. So I went home, and then to the gym where I belong. See, in the upstate (and most places in the south) the sun has been incognito over the past several days. But today was a pretty day, and I don’t take days like that for granted. 

Sunday was nasty. As in it rained all day. So, we decided to make some soup. Honestly soup isn’t my most favorite thing to eat (or I guess drink), but this soup is actually pretty good. Soup is always good on cloudy, rainy days. So, next time we get one of those days, you should try this out. 

 

Chicken Veggie Soup (For Days When the Sun is Shady)

 

Makes 4 hearty servings

Prep time: 5 minutes

Cook Time: 45 minutes 

Total Time: 50 minutes

Ingredients: 

  • 1 tbsp olive, coconut, or avocado oil

  • 1 – 1/2 lb. chicken breast – cubed. 

  • 2 cups carrots – chopped. 

  • 1/2 medium yellow onion

  • 1 – 1/2 cups mushrooms – sliced. 

  • 1/2 cup green onions – sliced

  • 4 cups chicken broth

  • 2 cups water

  • 2 tsp. garlic – minced

  • 1 tsp. pepper

  • 1 tsp. garlic salt

Instructions: 

  • Add oil to dutch oven pot. 

  • Cube thawed out chicken breast. Cut/slice veggies. 

  • Add the above ingredients to dutch oven pot. 

  • Cook on stovetop in dutch oven pot on medium heat for approx. 45 minutes, stirring occasionally. 

  • Turn stovetop to low after it’s done cooking. Enjoy over a bowl of cauli rice or regular rice (totally optional, but we did, and it was great). 

Notes: 

  • This can be done in the crock pot as well. I would cook on low for 4-6 hours

  • Adding cauliflower rice or just plain ole regular rice makes it even better. 

  • This is great for leftovers/meal prep if you want to save for later. 

 Cauliflower rice is a great addition to this soup. You can sometimes find it at Trader Joe's (they've been slack lately), but good news is most grocery stores now carry it in their frozen veggie section. Prepare separately. Pour soup over cauli.
