I emphasized the “Fajitas” in the title based on how I think the word should be said. Man, I love Mexican food. Can’t you tell? Sorry for all the fajitas and pico and salsa recipes. But you like it. 

We watched this show over the past week called Stranger Things. It’s a Netflix original. I gave it a shot because Daniel said if I watched it with him, he would watch Orange is the New Black with me next. So, I gave it a shot. It was scary. I was extra on edge leaving my house super early in the pitch black dark the other morning to go open the gym. But I pushed through, and it was actually a good show. I got a little emotional because all I wanted was for sweet little 11 “Elle”  to be able to live happily ever after and have a good life. I’m not gonna give away how it all goes down, but I’m a little distraught wondering if she’s ok.

In other happy news, I bought my first pair of Birkenstocks since the 9th grade. I love them so much. I’ve had my eyes on them for awhile. I don’t think I’ve spent that much on a pair of non CrossFit or running shoes since…the last time I bought a pair of Birks. But they’re so comfy. I’m never taking them off. I bought them to replace the gold flip flops my friend Rachael gave me back in 2010 for being in her wedding. They have a chunk missing from where Charlie (my dog) tried to eat them. And I was patient about buying these Birks. So, my friend Kelly drove up to Cabelas with me today,  and I got one of the last pairs they had AND they were on sale… like $20 off. Neato.

Well, we (mostly Daniel) made these fajitas today. They’re good by themselves. And they’re easy peasy. But they go best with the Mango Salsa I told you about last week. As well as Dan’s guac. Although I have to admit that the guac we used this time around came from the Publix deli. 

Lime Shrimp Fajitas (Fah-Ji-Tuhs)

 

Makes 4 servings

Prep time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

  • 1 tsp butter

  • 2 tsp garlic – minced.

  • 1/2 cup shrimp – peeled (Publix has some good ones right about now).

  • 1 medium red pepper – chopped and seeds removed

  • 1 medium yellow pepper – chopped and seeds removed.

  • 1 medium green pepper – chopped and seeds removed.

  • 1/2 onion – chopped.

  • Cumin – to taste.

  • Garlic Salt – to taste.

  • 1/2 lime – for juice.

  • Cilantro – approx. 1 handful, chopped

Instructions:

  • Put pan on medium heat. Add butter and garlic.

  • Chop peppers and 1/2 onion if you haven’t already done so, and add to pan. Let cook until soft.

  • Once peppers are soft and onion is translucent. Add shrimp. 

  • Add garlic salt, cumin, and lime juice from your 1/2 lime. Squeeze juice over entire pan, and mix well.

  • Allow fajitas to cook for another 5 minutes. Add cilantro.

Notes: Add Mango Salsa. And guac. Also, cauli rice goes great with this as a base. And while you’re at it, add your beverage. Hollllaaaa – there’s a full meal for you. Also, if you’re not into shrimp, another meat would be great.
