How about the finale of the CrossFit Games for the individual girls? Those girls are my heroes. I love the CrossFit Games. Katrin Davidsdottir is the CHAMP…again. I was sure that Toomey took 1st overall after that last event, but DOTTIR still edged her out. I bet they’re all gonna eat so much ice cream tonight. That’s what I would do. I would have ice cream waiting for me before I even left the arena. Speaking of food… I feel like all Daniel and I did this past weekend was watch the CF Games and eat…Good news is that we didn’t eat anything too terrible. Besides some ( a lot) of almond m&m’s and a couple of gin n ginger’s (me, not him).

Anyway, moving on to good food. This salsa is great. Today was the second time I’ve had it in the past week. I have a recipe coming for ya later that goes great with this. This salsa was made by Daniel. I think he’s the only one that cooks new stuff these days. I just cook cauli rice and peppers. But he can just throw anything together and make it good. So, he gets the credit for this. 

Dan’s Mango Salsa

 

 

Makes 4 servings

Prep time: 10 minutes

Cook Time: 0 minutes

Total Time: 10 minutes

Ingredients:

  • 1 medium(ish) mango – peeled and diced. 

  • 1/4 onion – chopped and diced.

  • 1 cup tomatoes – chopped and diced.

  • 1 medium jalapeño- remove stem and seeds.

  • Juice from 1/2 lime

  • Cumin – 2 tsp.

  • Garlic Salt – to taste

Instructions:

  • Peel mango. Slice and dice. Try to get as much meat off the mango as possible. 

  • Chop and dice tomatoes, onion, and jalapeño. Don’t forget to remove stem and seeds of jalapeño. Unless you want your mango salsa to be really spicy. I wouldn’t recommend that for this. You want this to be more on the sweet side. Use any kind of tomato. We used those grape tomatoes because they’re cute and someone gave them to me from their garden. 

  • To juice lime, roll lime on hard surface and apply some pressure before cutting lime in half. You’ll get more bang for your buck that way. 

  • Add garlic salt and cumin. 

  • Mix ingredients up well in bowl, and enjoy. 

Notes: This is great with…anything really. Make a lot, store in your fridge, and eat off of it all week. I also have another recipe coming for ya later that goes great with this salsa.
