Happy 6th Day of Christmas! Can you believe that Christmas is just one week away??!! I panicked a little bit earlier today, but I had a really productive day, so I feel better. This happens every year, but you know what? Every year everything works out just fine. How can it not? It’s Christmas. So, here’s to hoping you and I can have great attitudes this week, focused on what Christmas is really about – the birth of Jesus into this crazy world. When we take the focus off us – and the stress of  buying perfect presents, and crazy drivers, and terrible traffic, and long lines, and put our full focus on the meaning of Christmas, JOY comes from that. And we can all use a little more joy, right?

Speaking of JOY, these little gingerbread chocolate chip balls are pretty good. I dunno what it is about this time of year, but all the crazies bring out all the sugar. It’s everywhere. I indulged a little bit over the weekend, but I’m gonna stay straight this upcoming week so I can function and not be crabby to everyone. I make a version of these from time to time, and honestly, they’re not great for you. Duh. But if you’re getting sugar cravings, they’re awesome to have in the fridge. Just don’t eat them all at once. 

Gingerbread Chocolate Chip Energy Balls

 

Makes about 30 balls. 

Prep time: 10 minutes

Cool Time (in fridge): 30 minutes

Total Time: 40 minutes

Ingredients: 

  • 1 cup oats (I like the raw organic kind from Trader Joe’s but you should be able to get them at Publix, Target, or Walmart Market). 

  • 1/2 cup almond meal (We buy our’s from Trader Joe’s. Pretty inexpensive). 

  • 1/4 cup peanut butter ( We buy this Justin’s brand because it goes on sale a good bit at Target. If not, we just buy Trader Joe’s natural PB or even Jiff Simply Natural. I don’t have a prob with PB, but just make sure it doesn’t have a lot of trans fat. You can sub out for almond or sunflower butter). 

  • 1 tbsp agave or honey

  • 2 tsp ginger spice

  • 1 tsp pure vanilla extract

  • 2 tsp water

  • 1/4 cup dark chocolate chips (I like Ghirardelli dark cacao chips)

Instructions: 

  • Mix all ingredients in a medium sized bowl in the order above.

  • REEEAALLLLYYY mix well. Allow about 5 minutes of pressing with a spoon to mix.

  • Let bowl sit in fridge for about 30 minutes (allow mix to harden). Don’t let it sit for over an hour though. 

  • Remove from fridge, wash your hands (if you’re like me and you’ve been wrapping presents) and roll into little balls. You pick the size. 

  • Store in tupperware container, and remember, sharing is caring. Don’t eat all at once.
