October is here! That was fast. I feel like I blinked, and September happened. I can’t keep up. I’m trying to get used to these somewhat cooler mornings. I like October though. It’s my birthday month. But more importantly, I like it because PUMPKIN EVERYTHING. So, forgive me for two back to back weeks of pumpkin recipes, but I’ll take advantage of the situation while it’s October. 

Today Daniel and I went to Greenville. We were going to go eat somewhere swanky, but ended up at Babaziki, which I was cool with because I’ve never been there, and we got to sit outside and enjoy the sunshine. It was pretty good. We also went and saw that movie Sully. We go to the movies together about once a year. Honestly, I can’t sit still that long, or I fall asleep, so it’s hard to feel like we’re getting our monies worth. We also like totally different movies. I actually really don’t like movies. I’d rather be outside, or talking, or eating, or something. But we could agree on seeing this Sully movie. Looking back, it was probably a poor choice, as Daniel is flying with US Air/American Airlines in a couple days for work. But he said he’s not scared. We thought we were going to be the only ones in the theatre, but turned out that it started at 2:30, not 2 pm, like we thought. So, we got to see the same TV commercials over and over again, as well as the Lumineers World Tour commercial about 5 times- (What happened to movie previews?). All the cute senior citizens showed up at 2:30 for the movie, and there were maybe 3 legit previews before the movie started. Anyway, It was a good movie. That’s pretty legit to water land a huge plane. It also made me want to go back to NYC. One day. 

Sorry for the rambling. If you like pumpkins and you like pancakes, but you don’t want butter and tons of flour to clog up your arteries and intestines and make it hard for you to poop, try these out. They’re great for meal prep. Make a couple batches, and keep them in your fridge. They’re pretty filling. Also, Marlie says that eating pancakes will help me get lifting PR’s. I know she’s talking about pancakes from Mama Penn’s or IHOP or somewhere, but maybe these will help too.

 

Pumpkin Walnut Pancakes

 

Makes 6 Medium Sized Pancakes – 2 servings

Prep time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Ingredients: 

  • 4 eggs

  • 3/4 cup pumpkin puree

  • 1 tbsp honey

  • 1 tsp baking powder

  • 1/2 cup almond meal/almond flour

  • 2 tbsp steel cut oats

  • 1/4 cup chopped walnuts

  • 1- 2 tsp pumpkin pie spice

  • 1-2 tsp cinnamon

Instructions: 

  • Whisk eggs together in bowl. 

  • Add pumpkin puree and honey to bowl. Mix well. 

  • Add baking soda, almond meal, oats, chopped walnuts, pumpkin pie spice, and cinnamon to bowl. Mix well. 

  • Heat skillet to medium heat. Spray down with coconut oil – or whatever oil you prefer.  

  • Spoon about 1/6 of batter on to pan. Let cook for approx. 3 minutes before flipping. 

Notes: These are great for meal prep. Make a couple of batches, throw in the fridge, and eat as a snack. If you want to get fancy, top with fruit, maple syrup, or whatever else your little heart desires. I’m just gonna be basic and eat mine plain.
